Peaches and Cream Overnight Oats -- creamy, dreamy indulgent way to start your day

The smell of cinnamon and oatmeal swirling together in my kitchen is probably one of the best smells of all time. From oatmeal cookies, to a bowl of oatmeal that soothes my soul, to breads, muffins, yes even overnight oats (see below). Oatmeal is my jam!

You know what is not my jam?

Mornings.

Uggh, I struggle with mornings.

Making food for the kids is sometimes almost too much to manage, so the possibility of me making myself something for breakfast too is pretty much zero.

Anyone else out there struggle with mornings?

But it’s time for a change.

A tasty change.

One that smells like heaven and fills my house with the scent of peaches and cream and cinnamon in the mornings.

Yes my friends, I am telling you these overnight oats are the secret to starting your day off in a very good way.

And best of all, it takes less than 2 mins in the morning (even less if you want to eat it cold, but I like my oatmeal warm thank you very much) And here’s another secret, oatmeal that has been soaking in goodness overnight tastes EVEN MORE AMAZING!!!! When you heat those oats up bursting with all that creaminess and tastiness they drank up overnight, and THEN top them with fresh (or canned) peaches AND decadent cream.

Oh my word, it is pure heaven.

Heavenly Peaches and Cream Overnight Oats

Mix together in minutes before bed and wake to enjoy this creamy, dreamy indulgent way to start your day
Ingredients
  • ½ Cup Plain Greek yogurt
  • ¾ Cup Old fashioned oats
  • ½ Cup Peaches, chopped
  • 
2 teaspoons Chia Seeds
  • 1 teaspoon cinnamon
  • ¾ Cup Milk (or dairy-free alternative, almond milk, coconut milk, soy milk, etc)
  • 
2 Tablespoons Honey
  • Extra peaches
  • Heavy whipping cream (of full fat coconut milk, the thick creamy part) for topping the jars
Instructions
  1. Combine the yogurt, oats, chia seeds, milk and honey together.
  2. Mix well.
  3. Divide the oat mixture and spoon into 2 jars
 or any type of containers with lids
  4. Spoon ¼ C of the peaches on top of the oat mixture in each jar
  5. Put the lid on and leave overnight.
In the morning, top the jars with extra peaches
  6. Spoon a little cream on top.
  7. Enjoy!
  8. Note: I like to heat mine for just a bit (30-40 seconds) in the microwave before adding the final peaches and cream topping (read below for more tips and alternatives)

Best of all, it only takes a few minutes and a few jars the night (or week) before and you can have an amazing breakfast, treat or snack at your fingertips ANY TIME YOU WANT.
Quick Tip: Make a bunch of these on Sunday and you’ll be good to go!

Eat it on your way out the door, in the car, carry it in your purse and eat it when you get to work or the gym or wherever you have to be first thing in the am.

These overnight oats are like my son’s favorite book, you can eat them ANYWHERE!

Couple different ways you could make these overnight oats

Swap peaches for mango. Use coconut milk and coconut cream, add some toasted coconut on top and some fresh pineapple slices YUM!!
– Use almond milk, add cinnamon, nutmeg and cardamom to give these a fabulous chai flavor. Better yet, if you have some liquid chai concentrate include some of that in the night before too!
– Leave out the peaches, add in sliced bananas (the morning of) and a tablespoon of peanut butter (the night before)
– Leave out the peaches, use chocolate milk and add a few chocolate chips, toasted coconut and some granola

Note: I am dairy intolerant so I always make my overnight oats using nut milks or coconut milk. Instead of heavy whipping cream or greek yogurt, I use full fat coconut milk. It’s not exactly the same, but you can put it in the fridge so it is solid and scoop some on top for a creamy, coconut topping. You’ll want to mix it in, not eat it by the spoonful

this is my absolute favorite breakfast! I make a few of these and eat them throughout the week
